TWD—Blueberry Muffins

IMG_2663_finalmuffinI can't believe the summer is over! Of course, the weather will still be hot and our son went back to school two weeks ago. But Labor Day is the OFFICIAL end of summer—no more casual dress at work, the pools are closed and no more white shoes (At least for this girl. Wear whatever makes you happy. Except pajama pants in public. C'mon, people.)

IMG_2626-dough-in-bowlThese muffins were the perfect lazy Saturday morning treat. They were not too sweet and not too difficult. As promised, they were light and delicate the first day. The next morning, we toasted them and spread them with butter. Still good. By Monday morning though, they were showing their age. The recipe makes 18. I should've frozen some of them the first day.

IMG_2627-doughIf I had any complaints about the recipe, it was that the berries sank to the bottom even after tossing them with flour. It may have been because I used frozen berries. Of course, my son claimed that he didn't like them. He ate half of one. Kevin and I both liked them a lot. If you would like to make them, the recipe is here. There are also some lovely pictures (much nicer than mine.)

I didn't try the other recipe this time. The Sweet Berry Fougasse didn't appeal to me, and I know that nobody else at my house would be interested. I'll be curious to see what other TWD'ers thought of it.

  1. Pajama bottoms in public is a pet peeve of mine! I just don’t get it. I had the same problem with the blueberries sinking – I too used frozen. I wondered if maybe frozen, they were to heavy. We just had one this morning from the freezer – still good! The top is just softer – I like a crunchy top. :)

  2. I used fresh blueberries and mine sank, too! They were tasty :)

  3. Yup, sunken berries for me too!! The texture was fantastic, however! Perhaps your son was comparing these light muffins to the heavier bakery muffins. Such a difference, eh? :)

  4. I loved these muffins. I can’t get over how light they were. And it was nice that they weren’t too sweet. Perfect and I’ll be making them again! :)

  5. The muffins sound like they have a lovely texture, after reading all the TWD posts, I’d really like to make them. I made a version of the fougasse, and it was tasty, we enjoyed it for tea and had a savoury version for dinner.

  7. I don’t remember if my blueberries sank or not: the muffin were gone much too quickly ;-)
I’d loved to prepare the fougasse but unfortunately I did not have enough time…
It’s still on my “to bake list” :-)
